Preheat oven to 200°C. Rinse strawberries, pat dry, hull, and halve or quarter depending on size.

In a bowl, combine strawberries, balsamic vinegar, olive oil, honey or maple syrup, sea salt, black pepper, and thyme or rosemary if using. Toss thoroughly to coat.

Spread marinated strawberries in a single layer on a parchment-lined baking tray. Roast for 20–25 minutes until softened and lightly caramelized. Allow to cool slightly and discard thyme or rosemary sprig before serving.

Crumble feta into a food processor. Add cream (or substitute), olive oil, lemon juice, black pepper, and garlic if desired. Process until completely smooth and creamy, scraping down the bowl as needed. Adjust consistency with extra cream or milk if required. Check seasoning and adjust to taste.

Transfer whipped feta to a bowl, cover, and chill for 30 minutes to enhance texture and flavor, if time allows.

Spread whipped feta generously onto a serving platter or individual plates.

Spoon roasted strawberries along with their juices over the whipped feta. Garnish with fresh basil, drizzle with extra virgin olive oil, balsamic glaze, and honey. Sprinkle with chopped pistachios or other nuts as desired.

Serve immediately with slices of crusty bread, pita bread, or crackers.
