Classic Beef Mushroom Pie (Print Version)

# Ingredients:

→ Main Ingredients

01 - 2 pounds of beef (sirloin or chuck roast), chopped into 1-inch pieces
02 - 1 large onion, chopped into small pieces
03 - 8 ounces of sliced mushrooms (cremini or button work great)
04 - 2 medium-sized carrots, diced up small
05 - 2 minced garlic cloves
06 - 2 cups of flavorful beef broth
07 - 1/4 cup plain flour (all-purpose)
08 - 1 cup of red wine (optional, skip if you'd like)
09 - 2 bay leaves for that amazing flavor
10 - 1 teaspoon of fresh thyme leaves
11 - A sprinkle of salt and black pepper, however much you like

→ Crust

12 - 1 double crust (store-bought is fine or make your own from scratch)
13 - 1 beaten egg (gives the top a golden glow)

# Instructions:

01 - Warm a bit of oil over medium heat in a large pot. Toss in the garlic and onion, stirring until they soften up and turn clear. Throw in your beef chunks and cook until they've browned all over. Stir in the mushrooms and carrots, cooking everything together for another 5 minutes.
02 - Dust the flour over everything in the pot and mix it well. Slowly pour in the wine (if you want) and beef broth, stirring constantly as you add. Sprinkle in the thyme, bay leaves, and season with some salt and pepper. Simmer for 10-15 minutes until the gravy gets nice and thick. Take it off the heat and give it time to cool down a little.
03 - Turn your oven up to 400°F (200°C). Roll the bottom crust and press it into your pie plate. Spoon in your prepared filling, then cover it with the top crust. Pinch the edges to seal it up and cut a few small slits in the top crust to let steam out. Brush the crust with the beaten egg for that golden delicious finish.
04 - Pop the pie into the oven and bake for 30-35 minutes, or until the crust is golden and flaky. After it’s done, let it rest for around 10 minutes. This gives the filling time to settle so it doesn’t spill all over when you serve.
