Marry Me Pasta Dish (Print Version)

# Ingredients:

→ Chicken

01 - 1 tbsp oil from a jar of sun-dried tomatoes
02 - ¾ tsp salt
03 - ¼ tsp ground black pepper
04 - ¾ tbsp smoked sweet paprika
05 - 1 tbsp Italian blend seasoning
06 - 3 chicken thighs, boneless and skinless

→ Pasta

07 - 1 cup shredded Parmesan cheese
08 - 2 tbsp minced garlic
09 - 12 oz bow tie pasta (farfalle)
10 - 1 cup diced spinach leaves
11 - 2 tbsp tomato paste
12 - 2 tbsp butter
13 - 3 tbsp gluten-free flour
14 - 2 cups chicken stock
15 - 1 cup heavy cream
16 - 2 tbsp dried shallots
17 - 3 tbsp diced sun-dried tomatoes
18 - ½ tsp paprika (smoked, sweet)
19 - 1 tbsp Italian spice mix
20 - ½ tsp salt
21 - 1 tbsp minced onion
22 - Freshly chopped basil for topping

# Instructions:

01 - Grab a bowl and toss the chicken pieces with salt, pepper, paprika, and Italian seasoning until they’re coated well. Warm up the sun-dried tomato oil in a big pan over medium. Lay the chicken down and cook it for 3 minutes per side to get a nice sear. Lower the heat just a tad, cover the pan, and let it cook for about 6–10 minutes. Don’t forget to check that it hits 165°F inside before setting it aside to rest.
02 - As the chicken’s cooking, get a big pot of water boiling. Follow the directions on your pasta box to make it perfectly tender with a tiny bit of bite. Drain off the water and keep the cooked pasta close by.
03 - Heat up some butter in the same skillet. Toss in the garlic, onion, dried shallots, tomato paste, and sun-dried tomatoes. Add paprika and Italian seasoning. Cook the mix on medium-low until it’s smelling amazing, about 2 minutes. Sprinkle in the flour and give everything a good stir.
04 - Pour in the chicken broth and cream. Add spinach to the pan. Stir things around and let it simmer until it starts to thicken up and the spinach is soft. Sprinkle in the Parmesan and mix until the sauce is rich and silky.
05 - Chop the chicken into small pieces once it’s cooled. Add it, along with the pasta, into the skillet. Toss everything together gently. Finish with a sprinkle of basil before diving in!
