Effortless Tart Cherry Gummies (Print Version)

# Ingredients:

01 - ¼ cup plain gelatin powder
02 - 3 tablespoons raw honey
03 - 2 tablespoons freshly squeezed lime juice (strain out the pulp)
04 - 2 tablespoons freshly squeezed lemon juice (strain out the pulp)
05 - 1½ cups unsweetened or organic tart cherry juice

# Instructions:

01 - In a small pot, combine the tart cherry juice, honey, lime juice, and lemon juice. Place it over low-medium heat, and whisk everything while warming it up. Make sure the honey mixes in completely, but be careful not to let the mixture boil—this step should just take a minute or two.
02 - Take the pot off the burner once the honey has dissolved and the mixture's hot. Slowly sprinkle the gelatin into the warm liquid, just one spoonful at a time. Whisk quickly after every addition to keep the gelatin from clumping. If you notice any lumps, squash them against the side of the pot and whisk again until smooth.
03 - Work fast so the mixture doesn't start thickening! Use a pipette or spoon to carefully transfer the liquid into gummy molds, filling each cavity without spilling. No molds? No problem—just pour the liquid into a flat glass dish (around 11×14). Later, you can slice it into pieces once it sets.
04 - Move the filled molds carefully to the fridge, ensuring they're placed flat so the gummies set nice and even. Let them stay there for 2 or 3 hours without disturbing them. When they're firm to the touch, they're good to go!
05 - When the gummies are completely set, pop them out of the molds and put them in an airtight jar or sealable bag. Store them in the fridge where they’ll stay fresh for up to 10 days, but chances are they’ll be gone way before then!
