Rinse the mushrooms and sprinkle them with a bit of salt. Set them aside for later.

Grab three bowls. In one bowl, mix together the flour with oregano, garlic powder, cayenne, pepper, salt, chili flakes, basil, and thyme. In a second, beat the eggs and stir in the milk. In the third, add bread crumbs and, if you like, toss in a little more seasoning such as salt, garlic powder, or chili flakes.

Toss the mushrooms in the flour mixture, then pop them into a container with a lid and shake to coat. Dunk them in the egg bowl, then shake again. Finally, toss them in the breadcrumbs container, shake it, and place them on a clean plate. Keep going until you’ve coated all the mushrooms.

Heat oil in a deep pan to 350°F. Use a thermometer to keep an eye on the temp. Drop a few mushrooms in at a time—around six—and let them fry for 6–10 minutes. Flip them halfway through. Make sure your oil's back to 350°F before frying the next batch.

Lay the fried mushrooms on a plate with paper towels to soak up the oil. Eat them while they’re hot with a side of ranch or your favorite dip.
