Onions Sumac Parsley Tangy (Print Version)

# Ingredients:

01 - 1 tsp salt, add as needed
02 - Chop 1 tbsp of fresh parsley
03 - 1 large red onion, slice thinly
04 - 1 tbsp olive oil (extra virgin works best)
05 - Juice from 1 lemon or red wine vinegar - around 1 tbsp
06 - Sumac - 2 teaspoons for flavor

# Instructions:

01 - In a bowl, toss in the onion slices, salt, and sumac. With your hands, massage it gently for a minute or so. This softens the onions and blends the spices well.
02 - Throw in the chopped parsley, olive oil, and vinegar. Stir everything together, cover it, and set it aside for 20 minutes or longer. Store it in a tight container if making it ahead.
03 - Enjoy this as a zesty topping for burgers, wraps, or as a side dish. It pairs great with sandwiches, salads, and more!

# Notes:

01 - These onions get softer as they sit. If too watery, just drain the leftover liquid before eating.
02 - Red wine vinegar gives the onions a vibrant pink-purple shade. Lemon juice works too if that's what you've got.
03 - Switch up parsley with mint or cilantro for a fresh twist!
04 - Don't have red onions? Use white or yellow ones, but they won't be as sweet. Add a pinch of sugar to balance it out.
