Ramsay Lime Pie Dessert (Print Version)

# Ingredients:

→ Crust

01 - 1½ cups crushed graham crackers
02 - 4 tablespoons unsalted butter, melted

→ Filling

03 - 3 big eggs, whites and yolks divided
04 - 1 big egg, whisked
05 - One 14-ounce tin sweetened condensed milk
06 - ⅓ cup squeezed lime juice (Key limes work best)
07 - 1 tablespoon lime zest finely grated, plus extra for decoration

→ Topping

08 - ½ cup heavy cream or whipping cream, chilled
09 - 1 tablespoon powdered sugar
10 - ¼ teaspoon vanilla extract
11 - Lime wedges, for decoration

# Instructions:

01 - Heat your oven to 160°C. Combine the crushed graham crackers with melted butter. Push mixture firmly into a 9-inch (23 cm) pie dish and cook for 15 minutes. Let it cool down for 10 minutes.
02 - In a bowl, beat the egg yolks and whole egg until they're thick. Pour in condensed milk, lime juice, and zest. Stir everything together well.
03 - Whip the egg whites until they form stiff peaks. Gently fold them into your lime mix. Empty this filling onto your crust and bake for 13–15 minutes. Let it cool fully, then stick it in the fridge for 6 hours or leave it overnight.
04 - Beat the heavy cream with sugar and vanilla until it gets thick.
05 - Add whipped cream, sprinkle lime zest, and place lime wedges on top before you serve it.

01 - For the tastiest results, leave this pie in your fridge overnight so all the flavors can really sink in.
