Stuffed Sweet Potatoes Turkey (Print Version)

# Ingredients:

→ Sweet Potato Base

01 - 4 medium-sized sweet potatoes
02 - A pinch of ground cumin (about 1/3 teaspoon)
03 - 1 teaspoon of olive or avocado oil
04 - Season with salt and pepper to your liking

→ Turkey Filling

05 - 1 pound of ground turkey that's lean
06 - 1 tablespoon of olive oil
07 - 2 garlic cloves, minced or finely chopped
08 - 1 teaspoon of cumin powder
09 - 1 teaspoon of paprika
10 - 1 teaspoon dried oregano leaves
11 - 1 teaspoon chili powder
12 - Salt and pepper, adjust to taste

→ Vegetables and Beans

13 - 1 cup of canned diced tomatoes, including the juice
14 - 1 zucchini, grated (medium size)
15 - A handful of fresh spinach, roughly chopped
16 - 1 cup cooked black beans, rinsed and drained, optional
17 - 1 cup of corn kernels, optional

→ Toppings

18 - 1 cup of freshly shredded cheddar cheese
19 - A couple of green onions, finely sliced
20 - Salsa to go on top
21 - Plain Greek yogurt for spooning over

# Instructions:

01 - Pop holes in the sweet potatoes with a fork and microwave for 3 minutes per side until nice and soft. If baking in the oven, wrap them in foil and roast for about 45-50 minutes at 425°F. Either way, let them cool once done.
02 - After the potatoes are cool, carefully cut them down the middle lengthwise. Scoop the inside out while keeping the skins intact. In a bowl, mash the insides with some olive oil and a sprinkle of cumin.
03 - In a skillet, cook garlic in olive oil until it smells amazing. Stir in the turkey and cook it until browned. Toss in the seasonings, then add the tomatoes, beans, corn, zucchini, and spinach. Keep cooking until everything mixes together, warms through, and looks good.
04 - Take the potato skins and stuff them first with the mashed insides. Spoon the turkey mixture on top generously, then sprinkle with cheddar cheese.
05 - Pop them under the broiler for 6-8 minutes or until the cheese is melty and golden brown. Add green onions, salsa, and a dab of yogurt just before digging in.
