Fire up your oven to 180°C (350°F). For traditional non-fan ovens, crank it up a bit more—200°C (390°F).

Spread a tablespoon of honey on each square sheet of puff pastry.

On each pastry, scatter blue cheese crumbles, grated Parmesan, and walnut bits. Sprinkle with thyme and a pinch of salt and pepper.

Roll up each pastry sheet nice and tight, chop the roll in half lengthwise, and fold the edges carefully so the fillings stay put.

Take the long strips and twist them gently into circular spirals on some baking paper.

Give your pastry spirals a milk wash, then bake them for about 25-30 minutes until they're golden, puffed, and firm to the touch.

Pull them out of the oven, toss on some extra thyme, and serve warm.
